

Human Nutrition: Bovine Milk in Andean Peru

Bovine Milk is a Nutrient-rich produce which is commonly consumed in developed countries as part of a healthy diet (213.7 kg/year) not being the case for developing countries (55.2 kg/year). The economic desition of selling the milk by the small-size farmer (no more than 10 cows at a given time) and the lack of diversity for packed presentations stand as the major phenomenological interpretation for low values of Milk consumption in Andean Peru (around 10 kg/year). Milk in Andean Peru is believed to be richer in both Nutrients and Total Solids (above 12.5% and around 14.5%). Understanding Milk ultrastructure should also provide the means for innovation on Milk processing and industry. Finally, improving pastures in levelled and inclined farming lands should increase both the income of the farmer and then availability of Milk for the general consumer at lower prices.
