Study on the Hygiene and Sanitization of Local Mutton Shops in Allahabad City

Abstract
The present study was undertaken to evaluate the hygienic quality of raw mutton along with the characterization of isolated pathogens. A total of 10 mutton shop samples were collected from various locations of Allahabad city, India. Mean ± SE values of the standard plate count (SPC) was represented as (log10cfu/g) The mean value of raw mutton samples, number of Escherichia coli and Staphylococcus aureus in the mutton samples was 6.08±0.12 log10cfu/g, 30 and 21, respectively. The counts found in the present study were higher than the prescribed microbiological recommendation (BIS 1995, FSSAI 2011); thereby suggesting gross unhygienic status of raw mutton in the study area. Of the 10 samples from mutton stores, 30 isolates revealed E. coli while S. aureus was generated in 21 samples. On the basis of hygienic assessments and the presence of pathogens in muttons sold in Allahabad city shops, remedial measures are required, including awareness of hygienic practices during the subsequent handling of mutton.
