Development of Health Mix Enriched with Processed Citrullus lanatus Seed Flour

Abstract


Ready to Use Therapeutic Food (RUTF) is an energy-dense product used for the rehabilitation of malnourished children and facilitates home-based therapy. The availability of the necessary ingredients limits their use in some surroundings and further investigation of alternative regional ingredients is needed to overcome this limitation. In this study, attempts were made on the formulation of a health mix using Citrullus lanatus seed flour with multigrain to serve as a RUTF. Different ratios of the multigrain base to C. lanatus seed flour were prepared and a comparative study of nutritional analysis was performed to establish a health mix that is similar to the recommendations of RUTF. Based on the nutritional analysis, the formulation containing 60% multigrain base and 40% seed flour was selected and sensory analysis was performed using milk and water as the medium. The milk-based formulation was preferred and received a score >6. The study suggested that the health mix formulated using C. lanatus seed flour could be used as a RUTF.
